  • ¾ lb turkey breast
  • 2 oz ham
  • 1 oz heavy cream
  • sage
  • 1 sprig rosemary
  • salt and pepper

Preparation

15 minutes preparation + 25 minutes cooking

Pound the turkey leaves using a meat pounder, and put a small slice of dry-cured ham and a little chopped sage on each. Roll up the turkey slices making rather big rolls and secure them with a toothpick. Put the rolls in a pan, after melting the butter in it. Brown the rolls over high heat, season with salt and pepper, and continue to cook over a low heat with the lid on. Five minutes before turning off the heat pour in the cream and finish cooking. Serve on a hot plate.
