The aroma and flavor of Tuscany

In Tuscany, there are over 200 acres of land covered by olive trees.  The aroma and flavor of the olives vary from area to area, from the jagged coastline of the Maremma, to the softly rolling hills near Siena and Chianti to the Apuane Alpes, and the enchanting islands located just off the Tuscan coast.

Panzanella (Bread salad)

 

Serves 4

  • 1 lb home-made bread, raffermo
  • 2 tomatoes, ripened
  • 2 red onions
  • 1 cucumber
  • 1 sprig basil
  • Toscano IGP extra virgin olive oil
  • vinegar
  • salt and pepper

Preparation

30 minutes preparation

Slice the bread and soak it for a few minutes in cold water. When it is well impregnated, take a little at a time and wring out well using the hands. Then rub it in such a way as to produce lots of small dry crumbs.

Put into a salad bowl, add all the sliced vegetables and the basil leaves. Season with oil, salt, pepper and put somewhere cool. At the moment of serving, splash with wine vinegar.
