How to store it
Pecorino cheese should be wrapped in waxed paper or plastic wrap or tinfoil and stored in the coldest part of the refrigerator.
Ideally, harder cheese, like Pecorino Gran Cru, should be wrapped in a hemp or cotton cloth, fresh out of the laundry and without any soapy odors. The cheese should then be placed in a moderately ventilated pantry.
Cheese wrapped in cloth can also be placed in a plastic bag with holes in it, and left to rest in a fresh, dark place - as long as the cheese itself is fairly dry. Check the cheese regularly for bluish mold on the rind. Remember that seasonal changes in temperature affect the storage of cheese: in the summer, when the temperature and humidity reach the highest levels, it is necessary to store pecorino in the refrigerator.
An hour or a half and hour before serving, the cheese should be removed from the refrigerator. Remove any damaged areas.
