Pecorino Dolce Cheese
Sweet sheep’s milk cheese
Pecorino Dolce is a sweet sheep’s milk cheese. The milk comes from sheep raised on inland pastures in Sardinia, which are known for their rich vegetation. The strong aromas of the local herbs are present in the cheese and give it a complex, noble flavor.
Academia Barilla Pecorino Dolce is aged for at least three months, and maintains the fresh flavor of the milk.
Characteristics
Aroma: fresh milk, butter and hints of honey

Texture: white-colored paste, soft but compact, with tiny round-shaped holes and typical round shape
Serving suggestions
Try cutting the cheese into thin slices and serve with grapes, pears or fresh vegetables (fennel, chicories, artichokes or white turnips). It can also be used to add more flavor to meat dishes, rustic savory tarts and traditional Sardinian specialties.
The recipe: Cheese Buns

Ingredients
- 1 ¾ lb bread dough
- 4 oz Pecorino Dolce cheese
- 3 tablespoons extra virgin olive oil
- oil
Preparation
20 minutes preparation + 20 minutes cooking
Grate half the Pecorino and break the other half into pieces.
Work the bread dough with the cheese and the oil, form into a loaf, and allow to rise once more.
Make several doughnuts from the dough, arrange them on a greased baking sheet not too close to one another and bake in a hot oven (400°F) for about twenty minutes.
Allow to cool before serving.
