The recipe: Radicchio with Speck
Ingredients
Serves 4
- 4 heads red radicchio
- 7 oz speck (smoked raw ham)
- 1 tablespoon Balsamic Must of Modena - aged 8 years
- 1 tablespoon olive oil
- salt and pepper
Preparation
15 minutes preparation
Clean the radicchio, wash and dry it.
Dice the speck or pancetta (bacon) and sauté in a pan in the oil.
When the speck (or pancetta) is golden, add the vinegar.
Use this sauce to dress red radicchio, seasoning with salt and pepper.
Serve immediately.
