Making Traditional Balsamic Vinegar of Modena - Part 1

Grapes are harvested when they are ripe and full of flavor. Grapes are pressed to extract juice which is then cooked.
Initially the balsamic vinegar, after it has been fermented, is aged in large wooden barrels.
Barrels and casks are made from carefully selected woods. Many of the casks are several decades old.
