The preciousness of a balsamic vinegar comes from the
quality of the grapes, on the
length of the aging process and the
types of casks used. The best balsamic vinegar is made exclusively from grape must, and is aged 12 to 25 years. The less precious vinegars contain ingredients such as concentrated grape must, caramel or wine vinegar.
In the case of traditional vinegars (12 or 25 years of aging) the final flavor depends on the timing of the transfer of the vinegar to ever smaller barrels, and the wood from which the barrels of different sizes are made. These wood types and the stage of the aging in which they are used influence the aromas of the balsamic vinegar.
