Molecular Cuisine Demonstration at Academia Barilla, September 6, 2004





Committed to promoting the most innovative trends in Italian cuisine, Academia Barilla organized one of the first seminars on molecular cuisine in Italy. Celebrated Chef Ettore Bocchia conducted the demonstration, professor Davide Cassi provided the scientific background behind the molecular method. The event was attended and enthusiastically received by more than hundred top Italian chefs.
