Stewed Artichoke Hearts

Ingredients: Per 4 servings

  • 16 artichoke hearts
  • 2 garlic
  • 1 sprig parsley
  • vegetable broth
  • Extra Virgin Olive Oil
  • salt and pepper

Preparation:

You can find pre-cooked artichokes for sale in cans. For this recipe, heat a clove of garlic in a saucepan with oil. When the garlic is golden, remove and add the artichoke hearts, after draining them well. Season with salt and add a pinch of pepper and finely chopped parsley. Add some vegetable broth and cook, covered for 10 minutes over medium heat. Uncover and let the broth evaporate before bringing to the table. Artichoke hearts are also good boiled in water with lemon juice or vinegar and left to cool. Then they should be tossed with oil, parsley, garlic, salt and pepper. Otherwise, they can be broiled in the oven after having been stuffed with hard-boiled eggs, parsley, oil, salt, pepper and covered with breadcrumbs. Still yet, they can be stuffed with breadcrumbs softened in oil and lemon juice, garlic and anchovies.
