  • 8 wild garlic leaves
  • all-purpose flour
  • 2 egg whites
  • frying oil
  • salt

Preparation

5 minutes preparation + 10 minutes cooking

Wash and dry the ramp or wild garlic leaves. Dip in the whipped egg yolks and wheat flour. In a pan, heat the olive oil until very hot, then fry the leaves until golden. Remove with a spider or slotted spoon, and place on the paper towels. Season with salt and serve. You can also use the leaves of the Allium ursinun (Ramps), to give flavor to gnocchi.
