  • 7 oz potatoes
  • 7 oz carrot
  • 7 oz onion
  • 7 oz zucchini
  • 1 ¾ oz ham
  • 1 oz butter
  • ½ cup extra virgin olive oil
  • 3 ½ oz pearl barley
  • lb spare ribs, or bacon
  • 1 sprig parsley
  • 4 leaves of basil
  • 1 clove of garlic
  • 4 slices wholewheat bread
  • 7 oz Fontina cheese
  • salt

Preparation

1 hour preparation + 40 minutes cooking

Cook up a flavorsome and varied vegetable minestrone. Meanwhile, prepare the pearl barley with the ribs and add to the minestrone. Put the preparation in a large bowl, cover with toasted brown bread, oil, Fontina and chopped parsley, basil and garlic. Brown in a moderate oven (350°F) for about 10 minutes.
