  • 1 lb all-purpose flour
  • 7 oz sugar
  • 3 ½ oz pine nuts
  • 3 egg whites
  • 1 pinch cinnamon powder
  • orange zest
  • some wafer sheet

Preparation

20 minutes preparation + 15 minutes cooking

Mix together the flour, sugar, pine nuts, cinnamon and orange zest. Whip to stiff peaks the egg whites and fold in gently. Arrange the wafers on a baking sheet and place on each a spoonful of the mixture. Bake in a moderate oven (350°F) until the “birbanti” are golden.
