  • 6 eggs
  • 1 cup milk
  • 1 ¾ oz butter
  • 2 tablespoons all-purpose flour
  • 1 tablespoon oil
  • salt

5 minutes preparation + 10 minutes cooking

Mix the flour in the milk and fold in the eggs, namely six yokes and three egg whites. Whisk thoroughly the mixture so as to obtain a sort of smooth cream. Season with very little salt. Pour everything in the pan in which half of the butter together with the oil is already foaming. Brown one side of the omelette, pour in the remaining butter and brown the other side of the omelette. If liked, you can sprinkle over some custard sugar and serve hot.
