Corollo Ring Cake

Ingredients: Per 6 servings

  • 1 lb all-purpose flour
  • 4 ½ oz butter
  • lb sugar
  • 3 eggs
  • 1 half cup anise liqueur
  • 1 cup milk
  • lemon zest
  • 1 package baking powder

Preparation:

Make a well in the flour on a pastry board, and put in the center the well-beaten eggs and the butter. Add the sugar, the glass of Sassolino, a little grated rind of lemon, the yeast and the glass of milk. Mix to obtain a fairly soft dough. Butter a low, round oven pan and put into the center of it a glass that can withstand heat. Transfer the dough to the buttered and floured oven pan and put in a moderate oven at 275°F and bake for 40-45 minutes. Remove from the oven, leave to cool and sprinkle the surface with vanilla sugar.
