Ingredients

  • 5 oz Rice
  • 1 lb sugar
  • 15 eggs
  • 4 cups milk
  • 1 half cup anise
  • lemon zest, grated
  • 2 tablespoons all-purpose flour
  • butter
  • salt

Preparation

Boil the rice in abundant salted water for 5 minutes. Meanwhile, mix the eggs with the sugar and salt and slowly add, stirring constantly, the milk and the lemon rind. Grease with butter the bottom and sides of an oven pan and sprinkle with flour. Spread the rice over the bottom and cover with the milk and egg mixture. Bake in a moderate oven at 350°F for around 50 minutes.
