  • 2 lb smooth dogfish
  • 3 ½ oz tomato sauce
  • 1 ¾ oz pine nuts
  • 1 ¾ oz raisins
  • 4 cloves of garlic
  • 1 sprig parsley
  • salt and pepper

Preparation

30 minutes preparation + 30 minutes cooking

The word “Scapece” indicates the dressing of the marinated fish. Coat in flour and fry well the slices of smooth dogfish and immerse them in vinegar. Gently fry the onion cut up very finely in a pan. When it begins to change color, add the chopped tomatoes and leave to flavor for about 10 minutes. Add the pine nuts, passolina grapes (or raisins), the garlic roughly chopped, a clump of parsley, salt and pepper. Mix and put in the slices of fried dogfish after draining them well. Put on the lid, lower the heat and cook for a further 15 minutes. The dish is best if served some hours after preparing it.
