Ingredients
- 15 tangerines
- 5 oz sugar
- 3 oz starch
- colored sprinkles

Preparation
20 minutes preparation + 30 minutes cooking
Squeeze the mandarins and collect the filtered juice in a bowl (keeping aside the rind of one mandarin). Add enough water to reach a total qualtity of 4 cups and with a whisk, mix this liquid with the starch and sugar. Pass everything through a fine sieve amd pour the mixture obtained in this way into a pan and add the chopped rind of a mandarin without the pith. Stirring regularly with a wooden spatula, allow to cook until it comes to the boil and then eliminate the mandarin rind. Pour into a wet mold, and leave to cool in the fridge for about 2 hours. When it is time to serve it, turn the “Gelo” out onto a serving plate and decorate with mandarin leaves, colored sugar or seasonal fruit to taste.
