Zucchini Sticks al Parmigiano

Ingredients: Per 6 servings

  • 1 ¼ lb zucchini
  • 100 white onions
  • 3 ½ oz ham
  • Parmigiano Reggiano cheese
  • 4 tomatoes
  • oregano
  • vegetable broth
  • Extra Virgin Olive Oil
  • salt and pepper


Wash and cut off the ends of the zucchini. Cut each zucchini into 3 or 4 sticks of equal size. Thinly slice the onion and sauté in a little oil, flavored with powdered oregano. Brown diced prosciutto in the same pan. After a minute or two, add the zucchini sticks, salt, pepper and 1/2 ladleful of vegetables broth. Cover and stew over medium heat for 10 minutes. Then add the tomatoes, without the seeds and roughly chopped, and a generous amount of Parmigiano. Keep pan covered and continue cooking over medium heat until all the cheese has melted.
