Stuffed Peaches

Ingredients: Per 4 servings

  • 2 peaches , yellow
  • 1 cup milk
  • 2 tablespoons all-purpose flour
  • 4 tablespoons sugar
  • 1 pinch vanilla powder (or vanilla extract)
  • 1 lemon
  • 1 tablespoon butter
  • 1 egg yolk
  • 1 banana, ripened
  • 12 Ladyfingers


Cut the two peaches in half lengthwise without peeling them; stone them and slightly hollow out the centers. Put the pulp into a bowl, and crush it. Prepare a cream, by thickening over heat the milk after adding to it the flour, sugar, butter, vanillin and lemon rind, finely grated. As soon as it has come to the boil, let it boil once only; then, with the heat off, mix in the yolk, peach pulp, chopped banana, and crushd biscuits. Pour this cream into the peach halves, arranged in small individual oven-proof dishes, and pass them under a hot grill for a few moments. Serve the dessert cold.
