Pasta with olives and goat cheese

Enjoy this quick and simple Vegetarian pasta dish.

Ingredients: Per 4 servings

  • 1 lb mezze penne
  • 7 oz goat cheese
  • 1 oz extra virgin olive oil
  • 3 oz olives
  • salt

Preparation:

Pit the olives and chop finely.

Put the goat cheese in a bowl and, using a fork, pour in the oil, mixing continuously until creamy. Then stir in the chopped olives.

In the meantime, cook the pasta in a large pot of boiling, salted water. Check the box for the cooking time. When done cooking, drain the pasta and toss with the sauce.

Serve immediately.

Food History

Originally from the western part of Asia, the olive tree was probably cultivated for the first time around 6000 B.C. in modern day Syria. Olive cultivation spread rapidly across the eastern Mediterranean coast. By 1500 B.C., olives could be found throughout Greece. In fact, it was the Greeks to bring olives to Italy where they became a staple of the Latin culture, together with wheat and wine.
 
For the ancient populations, olives were a symbol of value. The Greeks and Romans used to place a crown of olive leaves on the heads of their best citizens. According to the Christian religion, the olive tree is a symbol of peace and is mentioned repeatedly in the Bible. Most everyone knows the story of Noah in which the end of the flood is confirmed by a dove carrying an olive branch.

Perhaps lesser known is the story of Seth. It is  written that an olive tree grew out of a seed given to Seth, one of Adam’s children, by an angel. Upon his father’s death, Seth place the seed between his father’s lips before burying him.
