Savoy Cabbage Salad

Ingredients: Per 4 servings

  • 1 lb savoy cabbage
  • 2 cloves of garlic
  • 2 salted anchovies
  • 1 tablespoon vinegar
  • Extra Virgin Olive Oil
  • salt

Preparation:

Trim, wash and dry the cabbage with a cotton dish towel. Cut into thin strips, then place in a bowl. Saute the garlic in a pan with a little oil. Then add the anchovies, rinsed, deboned and cut into very small pieces. Wait for them to dissolve, then add the vinegar. Turn off the heat and pour the oil and anchovies over the cabbage. Toss and wait a couple of minutes to serve. It you like strong flavors, you can add increase the amount of garlic, anchovies and vinegar.
