Defrost the dough at room temperature. In the meanwhile, defrost the spinach by heating it in a pan with a little cutter and let soften slowly. Stir from time to time. Remove the sausage from its casing and break apart into pieces. Add to the spinach when all the liquid has evaporated. Adjust salt and pepper. Add 1/2 a beaten egg and the cheese to bind the mixture. Roll out the pastry dough, thinning it slightly with a rolling pin on a floured work surface. Cut out 5 inch squares. Place a tbsp of filling at the center of each square and fold into a triangle. Moisten the inside of the dough so that it forms a better seal. Brush the puff pastry with the remaining egg and bake in a 400 °F for 15 minutes.
