  • bread dough
  • 1 ¾ oz lard
  • all-purpose flour
  • 3 eggs
  • 5 oz coppa (cured meat)
  • 3 ½ oz Pecorino dolce cheese
  • 1 ¾ oz black olives
  • butter

Preparation

30 minutes preparation + 20 minutes cooking

Place the dough on a well floured work surface. Form a well and break the eggs in the center. Then add the lard and begin mixing in the flour, a handful at a time. The dough will become very soft when the lartd is added. When the dough is smooth and elastic again, press it down lightly. Sprinkle the finely diced coppa (pork salumi), cheese shavings and chopped olives on top. Work together well, then put the dough in a floured bowl and let rise for half an hour. Once the dough has risen, divide it in two portions and form into a log. Cut into rounds, about 1/4 inch wide. Place the dough on a baking sheet, greased with butter and dusted with flour. Let rise for another hour. Bake in a 400 °F for about 20 minutes. Serve hot.
