Ingredients: Per 4 servings
- 4 slices sandwich bread
- 7 oz Mascarpone cheese
- 6 tablespoons arugula, chopped
- salt and pepper to taste
Carefully wash the arugula, then chop roughly. Dry well and place it in a bowl with the mascarpone. Mix well until you have a smooth cream, then adjust the salt and pepper and mix again.
Cut the bread into small rectangular pieces and places a teaspoon, or a bit more, of the mascarpone and arugula cream on top.
Once you have covered all of the bread rectangles with cream, place them on a serving dish and serve.
