Garlic Focaccia

Ingredients: Per 4 servings

  • 1 lb all-purpose flour
  • ¾ oz fresh yeast
  • ½ cup Extra Virgin Olive Oil
  • 4 cloves of garlic
  • 10 basil leaves
  • salt


Dissolve the yeast in 3 tbsp of warm water. Add 3.5 oz flour and mix the ingredients together to form a loaf of dough. Cut a little cross on top and place in a floured bowl and cover with a dish cloth. Let rise for 20 minutes. In the meanwhile, peel the garlic and pass through a garlic press, collecting the garlic and its liquid in a bowl. Form a well with the remaining flour. Add a pinch of salt and pour 3 tbsp of oil in the center. Add the garlic and finely chopped basil. Begin to knead the dough, adding a little warm water as you go. Incorporate the other ball of dough and knead together with force. The dough should end up smooth and no longer stick to your hands. Then, place the dough in a bowl and make a cross on top. Let rise for an hour. Roll out the dough on a baking sheet, greased with oil. Pinch the dough with the tips of your fingers and drizzle with the remaining oil. Bake in a 450 °F oven for about 20 minutes.
