Flat Beans and Tomatoes

Ingredients: Per 4 servings

  • lb flat beans, boiled
  • lb tomatoes
  • 7 oz onion
  • 1 stalk celery
  • sultanas
  • vinegar
  • Extra Virgin Olive Oil
  • salt and pepper

Preparation:

Cut the onion into wedges and the celery into round disks. Place in a large pan and sauté quickly in a little oil. Add a handful of raisins and a little vinegar to the pan. Then add the flat beans and tomatoes, cut into pieces. Adjust the salt, sprinkle with ground pepper and remove from the heat. Let cook and then serve.
