Corn and Zucchini Fritters

Ingredients: Per 4 servings

  • ½ lb zucchini
  • ½ lb corn
  • 2 oz all-purpose flour
  • baking powder
  • 1 egg
  • olive oil
  • salt and pepper

Preparation:

Cut off the ends of the zucchini and dice. Sauté in a pan with the corn in a little oil. Add salt and pepper. Transfer everything to a bowl and let cool. Then mix with 4 tbsp flour, the egg and 1 tbsp yeast. Use your hands to form small balls with the zucchini mixture. Lightly flour the outside and fry in hot oil. (Change the oil a couple of times during frying.) Remove when the fritters are golden and place on paper towels to absorb the excess grease. Then place on a serving dish and garnish as you please.
