Cherry Sauce

An easy dessert made with seasonal fruit

Ingredients: Per 6 servings

  • lb cherries
  • ½ cup water
  • 3 tablespoons sugar
  • 2 tablespoons cherry brandy
  • 1 tablespoon butter
  • 1 teaspoon starch
  • 1 pinch nutmeg

Preparation:

Wash the cherries, dry them, remove the stalk, and stone. Cook in little water, to which has been added the sugar and the cherry brandy. Cook until almost a pulp, then whisk in a blender along with all the cooking liquid, adding the butter, starch and nutmeg. Pour the preparation into a small pan and leave to thicken over very low heat, stirring carefully to avoid lumps forming. When it becomes velvety, leave to cool away from the heat, then put into the fridge to chill.
