Cherry Compote

A real treat to cook seasonal fruit, ideal to top icecream and cakes

Ingredients: Per 4 servings

  • 1 ½ lb cherries
  • 7 oz sugar
  • ½ cup water
  • 1 half cup Kirsch (dry cherry liqueur)
  • 1 stick cinnamon
  • whipped cream


Wash and dry the cherries. Remove the stalks and stone them; then collect them in a soup plate, sprinkle with sugar, and leave to rest for a couple of hours. Afterwards, transfer to a casserole and douse with water. Position the cinnamon stick in the center of the mound; put the receptacle onto the heat and cook over a good heat for 10 minutes. When the cooking is finished, using a slotted spoon, transfer the cherries to four dessert bowls in glass or crystal. Dilute the cooking liquid with the liqueur and pour over the compote, removing the cinnamon. Put into the fridge. Serve well chilled.
