Blackcurrant Sauce

Ingredients: Per 6 servings

  • 1 ¾ oz sugar
  • ½ lb black currants
  • 1 cup water
  • 1 lemon
  • 1 tablespoon butter
  • 1 tablespoon starch

Preparation:

Pour all of the sugar into a small pan and dilute with water. Put the receptacle onto the heat and thicken the liquid until it is almost syrup. Wash and crush the raisins. Sieve the liquid and add to the syrup, along with the starch and butter worked to a cream, and the juice and grated rind of the lemon. Put the liquid back on the heat, and thicken slowly, stirring gently, until velvety.
