Beans and Onions

Ingredients: Per 4 servings

  • 1 lb beans, boiled
  • 3 ½ oz red onion
  • ¼ red pepper
  • Extra Virgin Olive Oil
  • salt

Preparation:

Soak the onion in a cup of vinegar for 15 minutes. Then drain and mix with the boiled borlotti beans. Dice the peppers and sauté in a pan with a little oil, salt and finely chopped spring onion. Mix the peppers with the beans and serve.
