Asparagus with Basil Sauce

Ingredients: Per 4 servings

  • 1 bunch asparagus
  • 2 leaves of basil
  • 1 egg
  • vinegar
  • 1 cup Extra Virgin Olive Oil
  • salt


Clean the asparagus, peeling the ends of the stalks. Rinse well and blanch in boiling, salted water. They should remain crispy. In blender, puree an egg, basil leaves and couple drops of vinegar and the salt. Slowly pour in the oil, forming a dense mayonnaise. Plate the asparagus and serve with the sauce.
