Artichokes fricassee

Ingredients: Per 4 servings

  • 6 artichokes, finely sliced
  • 3 eggs
  • 1 ¾ oz grated Parmigiano Reggiano cheese
  • ¾ oz butter
  • olive oil to taste
  • salt and pepper to taste


Panfry artichokes for five minutes, add scrambled eggs with cheese and butter, season with salt to taste, and cook for only a few minutes. Salt and pepper to taste.
