Ingredients: Per 4 servings
- 8 potatoes
- 3 tablespoons all-purpose flour
Choose some mature potatoes, peel them and grate along with some freshly grated cheese. Add the flour and a pinch of salt and mix well. Transfer this mixture to an oven-dish greased with clarified pork fat or abundant oil, put in a preheated oven (about 400°F), and leave to bake until the surface is nicely golden and crunchy.
Instead of the potato tart, it is possible to prepare some tasty “tortelli”, making out of the same dough some small flattened pellets to be fried in abundant oil.
