Crescia Fogliata (Traditional Walnut Cake from the Marches)

  • 7 oz all-purpose flour
  • 3 ½ oz butter
  • 1 egg
  • salt
  • 1 lb apples
  • 3 ½ oz raisins
  • 7 oz sugar
  • 3 ½ oz walnuts
  • 5 oz dried figs
  • cinnamon
  • 1 cup Marsala wine
  • ½ cup Mistrà (anise liquor)
  • 1 ¾ oz jam
  • 3 ½ oz custard cream


For the preparation, mix well 1/3 of the flour and butter, make a ball and leave to rest. Mix the remaining flour with some salt, half a cup of water and the egg. Roll out a sheet that is not too thin. Cook over a low heat in a pan all the ingredients for the filling. When the peeled apples are half-cooked, remove and allow to cool. Meanwhile, roll out the pastry, pour on the filling and roll up. Put in the oven for 20-25 minutes at 400°F. Serve cold.
