Tomato and vegetable soup

Ingredients:
- 1 handful beans
- 1 handful peas
- 2 potatoes
- 1 leek
- 2 stalks celery
- lard, or bacon
- parsley
- sage
- basil
- garlic
- butter
- 1 spring onion
- 1 tomato, fully ripe
- yellow bread, stale
- cheese, grated
- salt
Preparation:
Brown the spring onion in the butter, add the tomato in pieces and then the vegetables, covering with hot salted water. When the cooking is finished, after about a couple of hours, put into the flat-bottomed serving plate a large slice of stale bread (one for each table companion), cover with grated cheese and pour over the mixture.
