Cotechino Rolls

Ingredients: Per 4 servings

  • 1 lb Cotechino sausage, pre-cooked
  • 1 lb beef meat, cut in a single slice
  • 3 ½ oz pancetta (italian bacon), sliced
  • 7 oz canned tomatoes
  • 3 ½ oz butter
  • 5 oz carrot
  • 3 ½ oz onion
  • 5 oz celery
  • 2 leaves of bay leaves
  • 4 cups broth
  • 2 ½ cups red wine
  • pinch salt


Remove the skin from the pre-cooked “cotechino”. Spread out the slice of beef and lay the “cotechino” on top, roll up the meat, cover with the slices of pancetta and tie with the kitchen string. Leave steeping for about 5-6 hours in the wine together with the cut vegetables. In a casserole containing butter, brown the meat, then add the stock, wine and vegetables used for steeping and halfway through cooking put in the peeled tomatoes and salt. Cook slowly for about 3 hours. Slice and sprinkle with the cooking liquid sieved.
