Cuccia (wheat pudding)

  • 1 lb wheat
  • ½ lb fig honey
  • 1 orange zest, dry
  • 1 handful walnuts


Clean and rinse the wheat: soak in cold water for 24 hours, then boil it in plenty of water. Leave to cool in its cooking liquid. Then drain and put it back over the heat adding the fig honey. Finish with the grated orange zest and a few chopped walnut kernels. According to another version, the wheat must be dressed with milk, dry orange zest, cinnamon, cloves, raisins, walnuts and grated chocolate. Traditional dessert for December 13th, Saint Lucy’s night.
