Put the slices of bread one on top of the other and, using a bread knife, carefully trim off the crust on all four sides. Spread the slices with the mayonnaise, then on top of each put a strip of pepper and some flakes of Grana-style cheese. Lay the canapés on a damp dish towel, leaving them there right up to the moment of serving.
