Bicciolani (spicy cookies)

  • 1 lb all-purpose flour
  • 5 oz sugar
  • 5 oz butter
  • cinnamon
  • clove
  • nutmeg


Mix the flour with the sugar and the spices, and after adding the butter, knead by hand for a long time. Leave to rest for at least 6 hours.

Butter an oven sheet, dust with flour, roll out the dough to a thickness of about half 0.4 inch.
Score the surface with the appropriate pastry wheel or, if unavailable, with a toothed bread knife.

Cut out some rectangles approximately 1.2 inches by 3.2 inches, distribute the cookies on the sheet, and put into a hot oven for 10 minutes or so (400°).
