Cod and potato soup

  • 2 lb potatoes
  • 4 cods
  • 1 cup extra virgin olive oil
  • 2 cloves of garlic
  • 1 sprig parsley
  • salt


Gut the cod removing the innards and gills and then wash them. Peel the potatoes, wash them and cut into disks, then cook them in a pan containing the oil, water and garlic over a low heat. Salt them, and as soon as they are cooked, add the cod and leave to simmer for a few minutes. Before serving, sprinkle with a generous helping of chopped parsley.
