- 2 lb spring onions
- ¾ oz butter
- pancetta (italian bacon)
- sugar
- 1 tablespoon vinegar
- salt
Preparation
20 minutes preparation + 40 minutes cooking
Put butter and sugar into a small pot over the heat and stir until the sugar is golden, then add the pancetta, minced and the vinegar immediately after. Stir, add the small onions, peeled, a pinch of salt, put the lid on, turn down the heat and cook slowly until the onions are done (it should take about an hour). The onions must glossy and rather dark in color.
