To complete sprinkle with ground black pepper.

Food history

Among the ingredients of this unusual spring salad are walnuts which are very appropriate for mother’s day: ever since ancient times in Italy they have been a symbol of life.

In Roman times they used to be thrown at weddings because their sound covered the shouts of the bride whose kidnapping was simulated. She then had to throw them as well because their bouncing was a sign of good fortune.

Such traditions haven’t been completely lost in Europe although now throwing rice is preferable.
