Ingredients

Servings 4

  • 4 oz pork meat
  • 4 oz beef meat
  • 1 ¾ oz carrot
  • 1 ¾ oz onion
  • 1 ¾ oz celery
  • ¼ cup extra virgin olive oil
  • 2 ½ oz tomato paste
  • ½ cup dry red wine
  • salt and pepper to taste
  • water to taste

Optional

  • 1 clove of garlic
  • 1 sprig rosemary

Preparation

1 hour preparation

Wash and cut the vegetables into small cubes.

Put a pan on the stove at medium heat and add the olive oil. When hot add the vegetables and cook well. Add the meat  and brown until there is no trace of water left.
Add the tomato paste and cook for a few seconds, adding the wine which must evaporate completely.

Salt and pepper to taste and leave to simmer for at least 40 minutes, adding water if needed.
If you want at this point you can season with chopped garlic and some rosemary.
