- 5 oz egg white
- 1 lb ground beef
- 3 oz celery
- 3 oz carrot
- 3 oz onion
- 7 oz ice
- 16 cups white stock
Put all the finely chopped vegetables into the egg white.
Mix the ice and minced meat with the vegetables.
Then pour everything into the fond blanc (white stock).
Simmer for about 15 minutes.
Strain the consommé and check that it is clear.
The consommé obtained in this way may be served with classic garnishing or filled pasta.
