Ingredients: Per 4 servings
- 4 eggs
- 1 lb all-purpose flour
- 1 pinch salt
- 1 ½ oz extra virgin olive oil
To make the dough, place sifted flour on a wooden cutting board or other flat surface and form a well. Break the eggs into a bowl and beat them with a tbsp oil and a pinch of salt. Pour eggs into the center of the well.
Start incorporating the flour, working from the inside out. Knead the dough with your hands until it is smooth and fairly thick. When ready, cover the dough in plastic wrap and let rest for 30 minutes.
