Valentine’s Day cake

A soft, cold mousse covered with a smooth strawberry sauce makes for a seductive dessert.

Ingredients: Per 4 servings

  • ½ cup milk
  • 2 ½ oz sugar
  • 2 egg yolks
  • 2 gelatin sheets
  • ½ lb ricotta cheese
  • ½ cup heavy cream
  • ½ lb strawberries
  • 2 ½ oz sugar
  • 2 gelatin sheets

Preparation:

Soak the gelatin in a bowl of cold water to soften. Boil the milk in a separate saucepan. In the meantime, whisk the egg yolks and sugar in a bowl. Once you have a creamy foam, add the boiling milk. Mix well, then return the mixture to the saucepan and bring to a boil. Cook for 30 seconds, then remove from the heat.

Immediately add the gelatin, removed from the soaking water and wrung out. Stir and let cool.

In the meantime, pass the ricotta through a very fine sieve. Whisk the heavy cream in a bowl to form soft peaks.

Then, whisk together the ricotta and egg cream. Carefully fold in the whipped cream. Use this mousse mixture to fill heart-shaped silicon molds with the help of a pastry bag or spoon. Even off the top of the mousse using a spatula and place the molds in the freezer for a couple of hours to solidify.

In the meantime, prepare the strawberry sauce:

Soak the remaining gelatin sheets in a bowl of cold water. In the meantime, puree the strawberries and sugar. Pass the mixture through a fine sieve to remove any seeds. Heat a couple of tablespoons of the mixture in a saucepan.

Once hot, add the gelatin, drained of the soaking water. Once the gelatin has dissolved, mix the hot sauce with the rest of the strawberry sauce and let cool.

Once the mousses have solidified, remove them from their molds and garnish with the strawberry sauce.

You can also decorate your Valentine’s Day dessert with strawberries cut in half and a handful of ground pistachios.

Strawberries can be considered the fruit of love not only for their shape, which vaguely recalls that of a heart, but also for their deep red color. An ancient legend about the origin of this fruit also supports this theory.
As the story goes, there was a young man in ancient Greece by the name of Adonis who was so handsome that he even Venus, the most beautiful of the goddesses, was in love with him. Thanks to carefully plotted strategies, the goddess of love was able to take Adonis to be her lover and convinced herself that they would never be separated. When the god Mars, who was in love with Venus, found out about her relationship with Adonis, he went crazy out of jealousy and decided to get back at her. Mars transformed himself into a wild boar to attack and kill Adonis. When Venus found out what was happening to her young lover, and realizing that she could do nothing to save him, she began to cry. Her tears fell on the body of Adonis and mixed with his blood becoming tiny heart-shaped fruit, or strawberries. These berries were believed to contain the passion of the Venus and her beautiful Adonis.
