Capri Chocolate Cake

Traditionally made on the island of Capri, this cake has a wonderful aroma of chocolate and almond.

Ingredients

  • 5 oz almonds, chopped
  • 3 ½ oz butter
  • 3 ½ oz sugar
  • 3 ½ oz dark chocolate
  • 3 eggs
  • 2 tablespoons crème de Cacao Liqueur, or Strega liqueur
  • ¼ oz baking powder

Preparation

20 minutes preparation + 55 minutes cooking

Blend the butter with the sugar until it becomes a creamy, smooth and uniform.

Add the beaten eggs and mix well.
Then add the almonds and finely chopped chocolate, mixed with the backing powder and a dash of liqueur (if you want).
Grease a cake tin, line with parchment paper and pour in the cake batter.

Bake in a 350°F oven for 50/55 minutes. When done baking, invert the cake on a serving dish. When cool, dust with powdered sugar.

This wonderful cake, rich with the scent of almonds and aromas of chocolate, is traditionally prepared without flour: for this reason, it seems to have been dubbed "one of the luckiest messes of history," indicating how the invention of this recipe was entirely fortuitous. Soft, crumbly and delicious, this cake is symbolic of the beautiful Isle of Capri.
