Potato timbale

Ingredients: Per 6 servings

  • 2 lb potatoes
  • 2 ½ oz grated Pecorino cheese
  • 5 oz Provolone cheese
  • 5 oz pork sausage, cut into chunks
  • 1 ¾ oz butter
  • parsley
  • 2 eggs, hard-boiled
  • salt

Preparation:

Boil the potatoes, peel them and mash them, them mix this purée with the Pecorino and the chopped parsley. If the mixture is too dense, add butter or a little milk. Then put the preparation into a buttered oven-dish and arrange the hard-boiled eggs inside, cut into rounds, with the Provolone in chunks and the sausage in slices. Finish off with some curls of butter. Bake in a moderate oven (350°F) for about 30 minutes and serve.
