Along the splendid Riviera di Ponente, the Ligurian coastline that extends from Imperia to Ventimiglia, you will find olive trees growing along the steep hillsides.

The recipe: Anchovies with lemon marinate
Ingredients
Serves 4
- ⅝ lb anchovies
- lemon juice to taste
- Riviera Ligure DOP extra virgin olive oil to taste
- salt to taste
Preparation
20 minutes preparation
Clean, de-bone and rinse the anchovies in cold running water.
Then dry on a dish towel.
Place in a bowl in layers with lemon juice, salt to taste, and add a bit of vinegar and a sprinkling of oregano.
Allow to rest in marinade for 24 hours, drain and place into another container and cover with olive oil, ready to be served.
